        Maybe I just don’t eat a ton of eggs and certainly don’t think about the number of eggs used to make other foods. But that 281 eggs per person just astounds me.

          People go through eggs incredibly fast. I myself eat at least three if it’s part of a meal, i.e. scrambled eggs with bacon and toast or something.

          Last month I had someone staying with me and we ate a dozen eggs in like three days.

          I’m pretty sure they including eggs that are part of other things you buy at the store and restaurants such as most bread products, cakes, some custard/ice cream, etc. I know that my two person household doesn’t eat anywhere close to that many eggs, otherwise.

            A quick list of foods with egg in them:

            Mayonnaise, meringue, egg noodles and pasta, creamy salad dressings, French toast, cream-filled pies, custard ice cream, pudding, sherbet and commercially prepared pancakes, cakes and brownies, cream puffs, custard and flan.

            Egg may appear on an (ingredients) label as albumin, globulin, lecithin, lysozyme, simplesse and vitellin. Food Ingredients labeled with “ova” – such as ovalbumin, ovomucin, ovomucoid – also indicate the presence of egg. Source
