For me it’s Ghost Recon(2001). Coming from rainbow six, the outdoor areas were mind blowing. Just replayed a quick map and it was still gorgeous to me.
Jak & Daxter the Precursor Legacy still looks amazing, not just for the time, but in general.
Wind Waker will never not look gorgeous.
And Ni No Kuni.

Half life 2
Final Fantasy III for SNES. The sprites and color schemes were just done so well. It still.holds up. I give it a playthrough every summer.
Is it cheating to pick something like No One Lives Under the Lighthouse? It’s a PS1 graphics style game on pc that is a short and fun little experience
the Original Doom 3 and Burnout 3 takedown
Chronotrigger

Don’t know how we’re qualifying “old” but there are games released today that I’m like “how does Skyrim still look better than this?”
Okami
Max Payne is beautiful in its own way.
Any of the notable cell shaded games always look good to me. Jet Set Radio, Okami, Auto Modellista, all still gorgeous
Oblivion
Skyrim
